Process design refers to the organization and configuration of food and chemical processes and manufacturing methods needed to transform/convert raw materials into finished products. Such processes are a sequence of steps directed to a specific result.
When flour made from grinding these grains is mixed with water the two proteins combine and form gluten. Without water, gluten is not formed. The more the dough is mixed, the more gluten is developed. This causes the dough to become elastic and stretchy, as can be seen in bread dough. The gluten is formed during kneading of the bread dough.
The course then branches into each dough system learning the mixing and fermentation specifics. The dough systems are listed from most to least commonly used for large-scale production. Additional learning objectives include liquid fermentation and continuous mix, which are simplified to illustrate the primary process.
